Quick and Easy Greens

Greens…mmmm. Makes you think of home-cooked meals at home with family. I have come up with a few tips to help get those warm-fuzzy feelings back at the dinner table.
Shopping List
3-4 lbs Greens (pre-packaged turnip, mustard or collards)
1 large onion
2 Tbsp of minced garlic
2-3 Tbsp of olive oil
Smoked Turkey drumstick
1 c. water
Seasoning (low-sodium but flavorful)
Directions
First wash the greens, although they may say pre-washed better safe than sorry. Set aside in a strainer/colander.
Now slice onion, slice meat off drumstick and heat oil in a large stock pot and add onion, garlic and turkey and cook until onions are transparent.
Turn heat down and now add the greens in batches and allow them to wilt before adding the next batch as well as season each batch to taste. The smoked turkey gives flavor and salt, so it is important not to use seasonings heavy with sodium.
Add the water and allow them to simmer 45-minutes-1hr until tender.
Yields 6 (¾ cup servings)
