Coconut Ginger Chicken

A blend of wonderfully seasoned chicken in a creamy coconut sauce that excites all 5 senses!
Shopping List
6-chicken parts seasoned to your taste (thighs or breasts)
1 can of coconut milk
2 tbsp fresh grated ginger
2 tbsp minced garlic
1-2 tsp of herbs (rosemary, thyme, marjoram, basil)
1-2 tsp curry powder
1 medium onion (sliced)
2-3 tbsp olive oil
Directions
Heat pan or skillet on medium-high. Add olive oil to skillet. Brown onions, adding garlic, curry powder, herbs, and 1/2 of the ginger amount to the skillet.
Set aside once onions are soft.
In the same pan, brown chicken on both sides approx. 2-3 minutes per side.
Return the onion and herb mixture to pan and pour in the can of coconut milk. Allow it to simmer 20-30 minutes on medium, until chicken is tender.
Add remaining ginger to chicken for the last 5 minutes of cooking.
Serve over cooked rice, preferably Jasmine rice.
